I was recently given the opportunity to do a product review on really yummy product by Freekeh Foods.
Pronounced “free-ka”, this dish is made from green wheat that is roasted over an open fire. During the roasting process, the straw and chaff are burned and rubbed off. The young grain on the inside is too moist to burn, leaving a grain that is slightly chewy with a earthy, nutty, and subtle smoky flavor. While this may be replacing quinoa as “trendsetter” in today’s kitchens, freekeh has been around since ancient times, and, has been considered a staple in middle Eastern diets for centuries.
Freekeh is super nutritious too! Low in fat, naturally high in fiber and protein, freekeh has a low glycemic index making it a great choice for those trying to keep their blood sugar steady. This little grain is also high in iron, calcium, and zinc! However, as freekeh is made from wheat, folks that are on gluten-free diets, this product will not be suitable for you.
Since it is September, and fall is right round the corner…. I thought, why not try Freekeh in a warm salad filled with kale, butternut squash, walnuts, and dried cranberries. There’s even a homemade dressing to with it. (Recipe found on Freekeh Foods Pinterest page under “Fall”).
So what did I think of my first experience with Freekeh Foods Original roasted green wheat?
I loved the nutty flavor, although it did not overpower the dish. The texture was soft, yet, enough consistency not to be mushy. Most of all… cooking the freekeh was as easy as boiling water, adding a pinch of salt, (and the freekeh), covering, and simmering for 20-25 minutes.
This product is not only delicious, healthy, and nutritious, it is super versatile! You can make savory or sweet dishes, and, it can be enjoyed for breakfast, lunch, and/or dinner. Enjoy at breakfast as a hot freekeh breakfast cereal, as an addition to your favorite muffin batter, even a vegan style “pudding”!
